SCHOOL LUNCH PROBLEM!

My first grade child came home from school today with a letter from the school about "Read Across America" week next week in celebration of Dr. Seuss. List included silly hat day, wear funny socks day and a few other things like that. All of which is totally great with me.

But, also on the list was "Buy your lunch in the cafeteria all week and be entered to win fun Dr. Seuss prizes on Friday." Not sure how I feel about that. While our school does a better job than most at trying to offer healthier foods, I still feel like I pack something healthier. Plus, should schools really reward students for purchasing lunch instead of packing?

What is your opinion? Should schools encourage students to buy school lunches instead of packing? Also, how would you handle this with your child?

It's WE TRIED IT! Friday. This Week: Organic Rosemary Roast Chicken

Now that we have all our organic whole chickens from Whole Foods. what should we do? First, here is some good advice for those of you that bought several (like me) and need to freeze some of them to use later: http://www.livestrong.com/article/460043-how-to-freeze-a-whole-chicken/

But, I am planning on fixing one of the chickens for dinner tonight. Here is the recipe I used since it was super easy and is smelling DELICIOUS already!!

1 (4-pound) whole organic chicken

8 garlic cloves, minced 

4 tablespoons chopped fresh rosemary

3/4 teaspoon salt 

1/4 teaspoon freshly ground black pepper

Cooking spray 

• 1. Preheat oven to 425°.
• 2. Remove and discard giblets and neck from chicken. Rinse chicken with cold water; pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat.
• 3. Combine garlic and rosemary. Rub seasoning mixture under loosened skin and into the body cavity. Sprinkle salt and pepper evenly over entire outside surface of chicken.
• 4. Place chicken in a shallow roasting pan coated with cooking spray. Bake at 425° for 10 minutes. Reduce heat to 375°; bake 1 hour or until a thermometer registers 180°. Let stand 5 minutes.
